Undoubtedly the “aristocrats’ cheese” it has always been a premium quality cheese with a long history hailing from Nottinghamshire, England. Milder than Roquefort and Gorgonzola, Stilton has a rich and mellow flavor with a pungent aftertaste and a creamier texture. This Stilton has a velvety-soft texture that melts in your mouth. The paste has a subtle, yeasty sweetness and a light salty, nutty finish. Stilton loves to be drizzled with honey and served with a bold red wine and is also the perfect end to a meal with a glass of Port. We recommend a Tawney Port or if you drizzle that honey a full-bodied red like.
