A pasteurized goat’s milk cheese from the Murcia region of Spain. Once it is aged for a short period of time, this smooth, creamy, goat’s milk cheese, is immersed in wine for approximately 72 hours. giving it a beautiful vibrant purple colored rind and then aged for an additional 80 days to allow the wine to infuse into the cheese as it finishes maturing to perfection. This cheese has a soft texture, with grassy flavors and creamy nuts. It is very wine friendly but loves delicate rose’s such as the Nizas from France.
